Drain and Rinse Shirataki Noodles well with cold water – Strain and set off to the side
Soak Uncooked Shrimp in cold water
Heat 1 can Coconut Milk in a medium saucepan
Add 1/2 can Curry Paste ” Red, Yellow, Green” To Coconut milk and stir thoroughly
Bring Coconut Milk to a simmer
Heat a frying pan to high heat with no oil. – Stainless works the best
Add Shirataki Noodles to the hot pan. The noodles will not stick. Toss them back and forth until the water is cooked off and you “hear them” squeal
Remove Shirataki Noodles from heat.
Add Shrimp to Simmering Coconut Curry soup
In about 2 Minutes the Shrimp will turn Pink, they are completely cooked at this point. Remove The soup from heat
In a Bowl, add 1/2 of the Shirataki Noodles and add Coconut Curry Shrimp.
Garnish with parsley, and add a side of Avocado for a great treat.
